THE CREPES:
2 cups rice or wheat flour (can also be 1 cup riceflour and 1 cup buckwheat four
2 cups milk
2 large eggs
2 Tablespoons good oil
Put these ingredients into a blender and whiz smooth.
Cook crepes on a griddle or non-stick skillet, cooking on one side only.
Place on a cooling rack, then stake with waxed paper separations.
FILLING:
16 ounces part-skim ricotta cheese
2 eggs
3 Tablespoon confectioner's sugar
Fill each crepe with 2 Tablespoonsful of the filling, folding into an envelope.
Assemble in a non-stick baking pan and seal with foil or a tight lid.
Bake in a 350 degree oven for 15 to 20 minutes.
Serve garnished with beaten, room temperature sour cream and sifted powdered sugar.

Rice Cakes
2 Cups left over cooked white or brown rice
2 to 3 eggs
1 teaspoon honey or sugar
dash of salt
pinch of nutmeg
Beat ingredients until frothy.
Serve with jam, syrup, or most any topping.

Caramelized Onion Bread Pudding
Note: this is much better than it sounds, but is dependent on high quality bread.
1/2 cup pinolas (pine nuts)
4 cups cubed leftover home made bread (the better the bread, the better the pudding.)
1 cup grated Parmesan, Fontina, or any combination of flavorful cheeses good for baking.
Toast the pine nuts in a dry pan and set aside.
Put the bread and cheese in a mixing bowl and toss.
3 - 4 large thinly sliced onions
4 Tablespoons butter
2 teaspoons freshly ground pepper.
Melt the butter with the pepper and caramelize the onions. This could take 20 minutes or more. The onions should be browned but not dry and burnt.
Mix the cooked onions with the bread and cheese and put into a large, deep baking dish.
1 1/2 cup milk and/or half & half
1 1/2 cups chicken broth
5 eggs
salt
pinches of cayenne and/or white pepper to taste
Paprika
Whiz the milk and eggs in a blender, add to the remaining ingredients
Pour the mix over the bread, make sure all is moistened and sprinkle with paprika.
Cover the dish with foil or a lid and set into a pan of hot water in the oven.
Bake for 1 to 1 1/4 hours at 325 degrees.
Serves 8 - 12 Can be made in individual ramekins.
