GLUTEN FREE BAKING
BASIC MIXES
What follows are three basic, easy to do flour mixes that reproduce wheat flour quite well. You'll save a lot of money if you make them yourself instead of buying pre-made pancake and baking mixes.
PANCAKE FLOUR --- flour mix for batters
3 cups brown rice flour
1 cup potato starch flour
1/2 cup tapioca starch
Mix well and store in a sealed jar.
BAKING FLOUR --- for muffins and breads
3 cups brown rice flour
1 cup potato starch flour
1/2 cup tapioca starch
1 1/2 teaspoons Xanthan Gum
Mix well and store in a sealed jar.
CAKE FLOUR --- for fancy cakes and cupcakes
3 cups white rice flour
1 cup potato starch flour
1/2 cup tapioca starch
1 1/2 teaspoons Xanthan Gum
Mix well and store in a sealed jar.
