Osso Bucco (Veal shanks) An untested recipe
2 Veal shanks or several slices of shanks.
potato flour
butter
peanut oil
2 diced garlic cloves
1 diced onion
1 chopped carrot
1 chopped celery stalk
2/3 cup white wine
2/3 cup chicken stock
1 Tablespoon tomato paste
1 minced garlic clove
lemon zest
Dredge the shanks in potato flour and braise in butter and oil.
When browned, reduce heat and add all remaining ingredients except the final garlic and lemon zest.
Simmer for 1 to 1 1/2 hours until tender to the fork.
Mix in the garlic and lemon zest and serve with risotto.
