The batter for GF muffins should be thin, like pancake batter. If it is too thick it won't rise properly.
When mixing the wet and dry ingredients work very swiftly as the Xanthan gum will soon make it harder to mix.

Basic Muffins
2 beaten eggs
1 cup milk, soy milk, buttermilk, or half 'n half.
1/2 cup oil(peanut is yummy)
Mix together well and set aside

3 teaspoons baking powder
1/4 to 1/2 cup brown sugar
Mix the dry ingredients well, then beat the wet ingredients into them.
Spoon into greased or lined muffin tins filling almost to the top.
Bake at 400 degrees for 25 minutes, rotating the pan after the first 15 minutes.
Makes 12 - 16 muffins
For bread, double the recipe and bake in a bread pan.Optional additions (one or more):
1/2 cup chopped nuts
1/2 cup raisins or currants (add 2 Tablespoons of soy milk to the liquids when using dried fruit)
1 heaping Tablespoon flax seed meal
1 heaping Tablespoon oat bran
2 teaspoons lemon, lime, or orange zest
1/4 teaspoon nutmeg

seeds from 2 green cardomom pods
1/4 teaspoon foenegreek seeds
very generous fresh grating of nutmeg
Simmer these ingredients in a small pan reducing the liquid then adding or subtracting to equal 1 cup.
Cool to room temperature.

2 Tablespoons finely minced candied ginger
Pinch of salt
Mix the dry ingredients well, coating all the ginger with dry mix.

Fill 3/4 full then bake at 400 degrees for 12 minutes. Rotate the pan 180 degrees then bake 10 minutes more.

Jalapeno Corn Bread
1 cup yellow cornmeal or 1 cup buttermilk

3 large very ripe mashed bananas
1 teaspoon vanilla
(1 cup of chopped pecans or walnuts) optional
Cream the butter and sugar.
Add the beaten egg and beat well.
Mix the flour, baking powder, and salt.
Beat together the bananas and vanilla.
Alternate adding one third the flour blend with one third the banana mix.
Blend in nuts if wanted.
Pour into a greased loaf pan.
Bake at 350 degrees for 50 minutes to one hour

1/2 cup yogurt
1 cup minced ham
1 cup grated sharp cheddar cheese
Mix the wet ingredients into the dry ones.
Spoon into greased or lined baking cups to about 3/4 full. (You may need to wet a finger to flaten the batter into the cup.
Bake at 350 degrees for around 30 minutes.
Makes about 16 substantial muffins.

1/4 cup peanut oil
