Kheer
(Note: Kheer is a simple rice pudding that is an exercise in patience. It is almost never done correctly in restaurants because it is very labor intensive.)
1 quart whole milk
1 Tablespoon white rice
4 crushed green cardamom pods
1 Tablespoon sugar
10 slivered unsalted pistachios (optional)
vark (optional) Vark is silver leaf.
Put the milk, rice and cardamom in a heavy sauce pot.
Put a stool next to your stove or sit on your counter.and boil while stirring until reduced to two cups.
This can take a long time, at least 1/2 hour. You can read a book with one hand and stir slowly with the other. Or since it's Indian food, you can meditate.
When the proper thickness is reached, add the sugar and stir a minute.
Turn into a bowl and cover with plastic wrap to avoid a skin.
Chill well.
Serve alone or with pistachios and vark.

Sweet Lassi
1/2 cup plain yogurt
1 cup water
1 1/2 teaspoons sugar
1 teaspoons rosewater
seeds from one green cardamom pod
Whiz it all in a blender until very smooth.
Can be served with a sprig of mint.
Serves one or two.
