Basic Jam Recipe
6 quarts of cleaned, chopped fruit or berries
3 cups sugar (or more if needed)
1/2 cup lemon juice
1/2 cup low sugar pectin
Boil the fruit with all but the pectin until soft and cooked through.
Gradually sprinkle in the pectin, stirring well and frequently and cook for 5 minutes.
Can while hot and bubbling.
2 pints of fruit produce 2 1/2 cups cooked jam, 6 pints of fruit produce 15 cups jam.
