A word about ingredients:
I use organic whenever possible.
I use all organic sugars so my main choice of sugar is Turbinado when available. It remains crunchy after baked.
Brown sugar is also available organic.
Valhorna cocoa is a French made chocolate much better than any I've ever found. I buy it through Amazon.com, and for bar chocolate, you may find it at Trader Joe's.

I've found you can bake all cookies at the same temperature!! ---- 350 degrees.

REFRIGERATOR COOKIES
Refrigerator cookies are fun because you can freeze them in the roll and bake cookies whenever you please. Just collect the dough into a pile, roll into a neat cylinder with your hands, wrap in plastic, and freeze. You can create them in many flavors.
After slicing these cookies mold the dough into a round than pushing a bit to the middle to into a mound. This will make a prettier cookie.

1 1/2 cups flour
1/4 tsp. salt
1 1/2 tsp. baking powder
Sift and set aside

1 tsp. hazelnut or other nut extract
Beat into the sugar mix then add the flour mix.

Spiral Refrigerator Cookies
You don't want to make these on a hot day as it's difficult to control the dough.
Or you need to refrigerate the dough to a workable temperature.
Divide the dough into 2 equal parts. Each part needs to be a different color.
You can do red and white, green and red, whatever you wish.
Roll out the each piece of dough flat and square. Stack them together and carefully stack one on another. Roll with care, chill well, and slice. Bake as per the recipe.
Or you need to refrigerate the dough to a workable temperature.

Drop Cookies
Drop cookies are those rolled into a ball shape. Chill the dough before rolling and you can cook it immediately or chill the balls, freeze them on a cookie sheet, then put them in the freezer in bags or containers.
Coconut Cookies
1 1/4 cups flour
2 tsp. baking powder
1/4 tsp. salt
Sift and reserve.
1/2 cup soft butter
1/2 cup brown sugar
1 cup white sugar
Cream together
1 egg
1/2 tsp. Vanilla
Beat together then beat into the butter mix. Add the flour mix and mix
well.
3/4 cup flaked coconut
Mix well into the dough. Chill for awhile then form into balls about the size
of a walnut, or to the size you wish.
Bake at 350 degrees for @ 10 minutes. They can brown a bit around the
edges, but don't overcook.

This is my most popular recipe.

3 tsp ground ginger
Sift and set aside
1 cup (2 sticks) very soft butter
3/4 cup white sugar
3/4 cup dark brown sugar
Cream until fluffy.
2 eggs
1 tsp Vanilla
1 1/2" inch piece fresh ginger, peeled and grated.
Beat well, beat into the butter mix, then work into the flour mix.
1/3 cup well chopped crystal ginger
Work into the dough. Chill the dough, then roll into balls the size of small walnuts.
Bake at 350 degrees. (do not flatten) for 12 to 14 minutes.

2 1/2 cups plus 2 tablespoons flour
1/3 cup Valhorna Cocoa, or another fine brand.
3 tsp. Baking powder
1/2 tsp salt
Sift and set aside
2 eggs
1 tsp. hazelnut extract
Beat together and reserve
1 cup soft butter
1 1/2 cups sugar
Cream to fluffy then beat with the egg mix.
Add this to the flour mix.
Chill well then roll into balls about the size of a small walnut.
Roll the balls in turbinado sugar or any nutmeal
Bake at 350 degrees for 10 minutes or more.
Optional additions: replace extract with any nut extract.
2 tsp. cinnammon, or 1 tsp. instant coffee crystals.
Six Treasure Cookies
One of the treasures is oatmeal, you can replace the ones here with other items.
1 1/2 cups flour
2 tsp. baking powder
1 tsp. nutmeg. (Fresh grated is best)
Sift and set aside.
1 cup soft butter
1 1/2 cups brown sugar
Cream to fluffy
2 eggs
1 tsp. Vanilla
Beat well then beat into the butter mix. Add to the flour mix
and work together.
1/2 cup each: Butterscotch chips, raisins, dark chocolate chips, flaked coconut.
3/4 cup broken or chopped pecans.
Work into the dough, chill, then roll into the size of a walnut.
Bake at 350 degrees for 12 minutes.
Makes 4 dozen cookies

1 tsp. nutmeg. (Fresh grated is best)

1 1/2 cups dark chocolate chips
Work the chips into the dough.
Chill then roll into walnut sized balls.
Bake at 350 degrees for 12 minutes.

1/2 cup sugar
1/2 cup brown sugar
Cream together
1 beaten egg
3 Tbsp. milk
1 tsp. vanilla
Beat well, then beat into the butter mix
Work this into the flour mix.

Work the chips into the dough.
Chill then roll into walnut sized balls.
Bake at 350 degrees for 12 minutes.
Bacon Chocolate Chip Cookies
An Untested Recipe
7 slices crisp bacon roughly chopped
Set aside
2 1/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
Sift and set aside
1 1/2 sticks softened butter
3/4 cups brown sugar
1/2 cup sugar
Cream together
2 eggs
1 tsp. vanilla
Beat the egg mix into the butter, then combine with the flour mix.
Fold in the bacon and 2 cups of dark chocolate chips.
Bake 8 to 10 minutes at 350 degrees.
Set aside
